Freshwater pearls are very popular due to their variety of shapes, colors and sizes. Sizes ranging from 2 to 8 mm are found, however, the average size is from 4 to 6 mm. The absolutely rare size of freshwater cultured pearls is more than 10 mm, so the price of such pearls increases dramatically!

"Hyriopsis schlegeli" is the most common freshwater shell and comes from the Unionide family. The outer sides are usually brown, however, the inner sides are smooth and white. Freshwater pearls, unlike saltwater pearls, do not have a core. The exception is pearls whose size exceeds 10 mm. If 1.5 years have passed, the pearl reaches approximately 3 mm. After 3 years it can already reach 7 mm. Freshwater pearls will only be larger than 7 mm if you wait another 4 years. This means that pearls more than 10 mm in diameter grow for more than 7 years!!!

The following colors of freshwater pearls are found: white, cream, champagne, orange-pink, lilac, light purple and brown.

Shapes from oval, ovoid, teardrop-shaped to potato-shaped. Perfectly round, large pearls are absolutely rare.

Saltwater pearls (pearls grown in salt water). Saltwater pearls are grown on similar farms, only in the open sea. They are valued more than freshwater ones. Usually no more than one, less often three, pearls are extracted from one pearl shell. As a rule, pearls have a fairly regular shape and good shine. What is the reason why such pearls are more expensive? Salty sea water gives pearls a special shade and a slightly more even color than fresh water, which is why it is valued higher.

The growth rate of sea pearls is higher than the growth rate of river pearls. The lifespan of a sea pearl shell is no more than 8-10 years. In the open sea it is very difficult to protect shellfish from storms and changes in water temperature. When the temperature changes by just 2 degrees, the mollusk’s body begins to produce a weak acid, which instantly corrodes the top layer of the pearl - it, of course, becomes cloudy from this and completely loses its shine. Thus, pearl farmers often lose the result of many years of work in just one day. Therefore, to reduce the time of pearl production, most marine farms these days use a seed core.

Cultured specimens are grown using two main technologies.

  • River (freshwater) pearls are grown using a nuclear-free method. This technology uses a mini-seed core: usually a piece of nacre from the shell itself. With a microscopic nucleus, a pearl needs more time to mature to the desired size than one growing using the nuclear method.

First you need to boil seafood and fish in salted water, then cut them into large pieces. Marinate them in a mixture of lemon juice and mustard. After our ingredients have cooled, we need to add rice to them. Grate cheese and cucumber on top, then season the salad with mayonnaise. Decorate the top of the salad with caviar in small piles or place it separately on plates, along with the portion.

Sea pearl salad “In a glass”

The salad looks very beautiful, it really attracts every guest with its design and presentation. The color range of the salad is very pleasing to the eye, the number of bright colors it presents to us is very large, and because of this we feel a special surge of energy in our body.

Ingredients:

  • crab sticks 240g;
  • eggs (chicken) – 4 pcs.;
  • squid – 500g;
  • caviar (red) – 100g.
  • mayonnaise - to taste
  • salt - to taste

Preparation:

Cook the squids, give them time to cool and cut them into strips.

Finely chop the crab sticks.

  • eggs (chicken) – 5 pcs.;
  • egg (quail) – 1 pc.;
  • squid (canned) – 240g;
  • caviar (red) – 140g.
  • mayonnaise - to taste;
  • olives (pitted);
  • dill and parsley.

Preparation:

  1. First, boil the eggs, cool them and peel them. We separate only chicken eggs into yolks and whites, and grate them separately from each other on a fine grater.
  2. Prepare shrimp as directed on package. After this, cool them and remove the shell.
  3. Cut the canned squid into strips. Let's start with the sequence of salad layers.
  4. First we put in the squid. Afterwards, apply an even layer of egg yolk and grease with a mayonnaise mesh. Take the first half of the shrimp and place the next layer. On top there is an even layer of egg white and again a mayonnaise mesh. And with the last layer we spread our red caviar.
  5. The second half of the shrimp should be placed along the edges of our salad bowl. In the very center of the salad, place a peeled quail egg, the very pearl of the salad. Decorate the salad with parsley and dill, and decorate the edges of our salad with olives.

The masterpiece is ready, it can be presented to the table.

Warm salad “Sea Pearl” with shrimp, squid, vegetables and olives

Juicy, bright, aromatic and very tasty warm salad with seafood, sweet peppers, spicy olives and grated cheese. This salad can be a complete lunch or dinner.

Ingredients:

  • frozen peeled shrimp (200 g);
  • fresh/frozen squid, fillet (200 g);
  • marinated olives, pitted (50-100 g);
  • canned olives, pitted (50-100 g);
  • parmesan cheese/other hard cheese (100 g);
  • red bell pepper (large, 1 pc.);
  • quail egg (3-4 pcs.);
  • tomato (large, 1 pc.);
  • red caviar (50 g);
  • iceberg lettuce/lettuce/other (200 g);
  • olive/other vegetable oil (100 ml);
  • lemon juice (3 tbsp);
  • garlic (4-5 cloves);
  • salt, freshly ground pepper (to taste).

Preparation:

  1. Boil quail eggs hard-boiled. To do this, they need to be lowered into boiling water using a spoon and cooked for 3-4 minutes after boiling again. Cool in cold water.
  2. Thaw the shrimp under running cold water and dry with a paper towel.
  3. Wash the squid fillet and remove films. Place in boiling water for 20-30 seconds. As soon as the meat turns white, remove the carcasses. Frozen fillets must first be thawed, rinsed and placed in boiling water for 1 minute (no more). Place the fillet on a paper towel, pat dry and cut into rings.
  4. Wash the bell pepper and remove the seed box. Cut into strips.
  5. Drain the brine from the olives and black olives and cut them into rings.
  6. Wash the tomato and remove the stem. Using a sharp thin knife, cut the tomatoes into large strips. It is advisable that the tomato is not too ripe and soft, otherwise it will acquire a mushy consistency in the dish.
  7. Pour bell pepper into a frying pan with heated olive oil. Saute until soft (4-6 minutes), stirring.
  8. Add olives, black olives and tomatoes to the peppers. Add salt, season to taste and cook until the tomato is soft, stirring gently.
  9. Heat olive oil in a second frying pan, add shrimp and squid fillet. Season with salt, pepper and pour 1 tbsp. l. lemon. Add 2-3 cloves of garlic, passed through a press, and mix. Cook covered over low heat for about 5 minutes.
  10. Peel the eggs and cut them into halves.
  11. In a separate bowl, mix 30-50 ml of olive oil, 2 tbsp. l. lemon juice, salt and pepper to taste. Add 2-3 cloves of garlic (pass through a press) and beat with a fork. The gas station is ready.
  12. Wash the lettuce leaves, dry with a napkin and tear into large pieces with your hands.
  13. Grate the cheese on a fine grater.
  14. Make a bed of lettuce leaves on serving plates or a large platter.
  15. Place shrimp with squid and stewed vegetables. Drizzle dressing over salad and sprinkle with cheese.

It is very refined, although they say that this salad is intended only for holidays, but no one forbids us to prepare it in our free time and admire its appearance, as well as its indescribable delicate taste. Another big plus of the salad is that it cooks very quickly.

Ingredients:

  • eggs (chicken) – 4 pcs.;
  • egg (quail) – 1 pc.;
  • crab sticks – 250g;
  • squid – 500g;
  • caviar (red) – 100g.
  • mayonnaise – 150g;

Preparation:

  1. Boil the squid, then cool it and cut it into thin strips.
  2. Cut our crab sticks into small pieces.
  3. Boil the eggs and leave only the whites for the salad. We chop them finely.
  4. Take a bowl and mix all the ingredients, add salt to taste.
  5. Gently lay out the red caviar (leave 20 grams of caviar to decorate the salad). Mix the salad thoroughly again and season it with mayonnaise. We put it in a salad bowl and place red caviar in the very center, place a quail egg on top of it (butt to top).

Methods of growing pearls:

There are two main ways to grow pearls

  • Nuclear (a seed nucleus is placed in the shell; the method is used to obtain sea pearls)
  • Nuclear-free. The second method is more inexpensive and has become most widespread in the cultivation of freshwater pearls, especially in China.

Nuclear method. How does this happen? First, a donor pearl oyster is selected. Most often this is a young pearl oyster with a good mantle - that is, a nacreous shell. The recipient pearl mussel must have a well-developed gonad (the so-called reproductive gland that secretes nacre). The shell with it is opened with pliers, and then a delicate surgical operation is performed: with specially designed instruments, an incision is made in the soft tissue and a graft is inserted into it - part of the mantle of the donor pearl oyster. A ball 6-9 mm in diameter, extracted from a bivalve freshwater mollusk, is placed next to it. After this, the pearl mussel goes back to the lagoon, where it spends another two years in peace. This is the most dangerous time: she may die or throw out the core (that same ball) - the probability of this is very high. If everything goes without complications, after a few years you get pearls. One of the external advantages here is the ideal surface of the pearl, because mother of pearl grows in a thin layer on a smooth artificial ball. The actual thickness of nacre on such pearls is from 0.2 to 1 mm. Such a 10 mm pearl grows in just a year (!). Such pearls can only be called natural with a big stretch. When you take it in your hand, it instantly heats up, like any piece of plastic - even an inexperienced person will immediately distinguish a real, weighty and cold pearl from its weightless, easily warmed-up plastic imitator.

Nuclear-free way. The advantages of another method of growing pearls are that with a sufficiently small grain of sand and long-term growth, cultured pearls are in no way inferior, and often surpass natural ones - in size and color. Today, most freshwater pearls, the size of which does not exceed 8-9 mm, are grown using nuclear-free technology, where a grain of nacre sand taken from the shell itself is used as a seed nucleus.

Sea pearl salad “It couldn’t be simpler”

Ingredients:

  • squid – 500g;
  • egg (chicken) – 4 pcs.;
  • egg (quail) – 1 pc.;

  1. Bring water to a boil, put squids in it for exactly 3 minutes, then cool them and cut them into strips.

  • shrimp – 400 gr.;
  • egg (chicken) – 4 pcs.;
  • egg (quail) – 1 pc.;
  • caviar (red) – 120g.
  • mayonnaise - to taste;

Preparation:

  1. Cook the squids for 3 minutes, remove the film, cool them and cut them into strips.
  2. Before peeling the shrimp, they need to be filled with boiling salted water (there is no need to cook them).
  3. Cut the crab sticks into thin layers.
  4. Boil, cool and peel the eggs. The whites should be grated on a fine grater, but yolks are not needed for this salad.
  5. We take out a deep bowl and add all our ingredients into it. Mix well and season with mayonnaise, then add caviar and gently mix our salad.
  6. We take out a flat dish and put our salad in a heap. A boiled quail egg should be placed on the top of the mountain.

Salad “Sea Pearl” with crab meat, rice and Parmesan

Luxurious salad with crab meat, fluffy rice and cheese. You can use frozen or canned crab meat in this recipe.

If you are lucky enough to buy fresh crab, you need to cook it as follows:

  • boil water in a saucepan in a ratio of 1:5 (for every 0.5 kg of crab weight there should be 2.5 liters of water);
  • add salt at the rate of 1 tbsp. l. salt (preferably sea salt) for every liter of water;
  • add 1 peeled onion, celery, bay leaf, peppercorns, juice of half a lemon and herbs to taste (dill, parsley, etc.);
  • Place the crab in boiling water and cook for 10-15 minutes after boiling. Very large crabs are boiled for about 30 minutes. When ready, they acquire a rich red color;
  • drain the water and place the finished crab in ice, belly up, for 5 minutes.

Cooking time: 1 hour 30 minutes Number of servings: 7-8

Ingredients:

  • frozen/canned crab meat (400 g);
  • fresh/frozen shrimp (200 g);
  • fresh/frozen squid, fillet (200 g);
  • basmati rice/other long grain (150 g);
  • chicken egg (4-5 pcs.);
  • sweet and sour apple (2 pcs.);
  • parmesan cheese/other hard cheese (150 g);
  • bay leaf (4-6 pcs.);
  • allspice peas (4-5 pcs.);
  • lemon juice (2-3 tbsp.);
  • mayonnaise (200 g/to taste);
  • salt, freshly ground pepper (to taste).

Preparation:

  1. Thaw the crab meat (as a rule, frozen crabs are sold already boiled) and place in boiling salted water with the addition of bay leaf and pepper. Cook for no more than 3 minutes after boiling again. Cool the meat and chop finely (if you are using canned meat, just drain the liquid and chop finely).
  2. Rinse the rice several times (until the water becomes clear) and soak in cold water for 15 minutes, then drain the water. Boil water in a saucepan (for 1 cup of rice you will need 1.25-1.5 cups of water), add salt, add a little vegetable oil and add rice. As soon as the water returns to a boil, set the heat to low, cover the pan with a lid and cook the rice for about 12-15 minutes.
  3. Boil the eggs hard (8-10 minutes after boiling) and cool in cold water.
  4. Wash the shrimp, place in boiling salted water, add bay leaf and pepper. Cook for 3-5 minutes after boiling again. Place the cooked shrimp in a colander. Cool and peel.
  5. Wash the squid fillet and remove films. Place in boiling water, add bay leaf and peppercorns. Cook for 40-60 seconds. As soon as the meat turns white, remove the carcasses. Sprinkle with lemon juice and judge. Frozen fillets must first be rinsed from the ice crust, then immersed in boiling water for 3 minutes (no more).
  6. Finely chop the shrimp and squid fillet.
  7. Grate the cheese on a fine grater.
  8. Wash the apples, remove the seeds and grate the pulp. Sprinkle with lemon juice.
  9. Mix all ingredients in a deep bowl, add salt and pepper to taste. Season with mayonnaise and mix thoroughly. Pack the salad tightly with a spoon, cover with cling film and place in the refrigerator to soak for 1-2 hours.

  3. Grate the squid and crab sticks and place them in a deep bowl.
  4. Add our colored egg whites, mayonnaise and red caviar to it, then mix gently.
